About Andhra Nuvvula Podi

Sesame seeds have a slightly sweet, nutty quality when roasted that makes nuvvula podi feel heavier and more filling than other podis. Where kandi podi is punchy and sharp, nuvvula podi is softer and more rounded. They complement each other well, which is why many Andhra households keep both.

This is made with roasted white and black sesame seeds, roasted chana dal, Guntur red chilli, garlic, cumin and rock salt. The sesame seeds are roasted carefully because they go bitter quickly if overcooked. Done right, the powder has a warmth that stays.

Mix it into hot rice with ghee. Sprinkle over roti. Use it as a dry dip for idli or dosa. Sesame seed powder also works really well mixed into lemon rice for a different texture.

Sesame seeds are naturally high in calcium, which is part of why this podi was traditionally given to new mothers and elderly family members in Andhra homes. Whether you eat it for the nutrition or just because it tastes good, either reason is fine.
