Gond katira laddu is a seasonal sweet with a purpose. Gond (edible gum) is a resin collected from tree bark that puffs up dramatically when deep-fried in ghee — from a small hard pebble to a large porous foam ball that absorbs whatever flavour surrounds it. In laddu form, mixed with dry fruits, ghee and jaggery, it becomes a warming, energy-dense sweet that was traditionally prepared for winter consumption and for women recovering from childbirth.
This is made with roasted gond puffed in ghee, then mixed with roasted wheat flour, powdered jaggery, ghee, cashews, almonds, raisins, cardamom and dried ginger (sonth). The sonth and cardamom are important — they give warmth and help with digestion. This is an old recipe, the kind that grandmothers knew by ratio and feel rather than written measurement.
The texture is unlike other laddus — the puffed gond gives it a slightly crunchy, airy quality inside the dense laddu. The jaggery sweetness, ghee richness and dried ginger warmth make it a complex eating experience.
Eat one laddu in the morning with warm milk. Not two — one is enough. These are nourishing in a way that's meant to last through the morning. In winter especially, they're the kind of food that actually does what it claims.
