Rava laddu is the most approachable sweet in any Indian kitchen. It doesn't require special skills or equipment. It keeps well. It's not too sweet. Almost everyone eats it. In Andhra homes, it's the sweet that gets made when someone needs a laddu urgently — for an impromptu puja, for a festival that snuck up on you, for guests who arrived without notice.
Made with semolina (rava) roasted in ghee until it turns golden and fragrant, mixed with powdered sugar, broken cashews, raisins and cardamom. Ghee acts as the binder when the mixture is still warm — you shape laddus quickly before it cools and sets. The fragrance of ghee and cardamom together is the smell of rava laddu, and it's unmistakable.
The texture is grainy and slightly coarse in the best possible way — semolina retains its texture even in a laddu. It doesn't melt in the mouth the way Mysore Pak does; instead it dissolves gradually.
Keep these in an airtight container. They stay fresh at room temperature for about a week. Good as an after-meal sweet, good in a tiffin box, good at every festival.
