About Andhra Peanut Podi

Peanut podi is the most filling of all the Andhra powders. Groundnuts are protein-rich and fatty, which means a spoonful of this podi on rice actually satisfies in a way that lighter podis don't. It's not a coincidence that this was one of the first things packed by Andhra workers who left for cities — shelf-stable, nutritious, and able to make plain rice feel like a real meal.

This is made with roasted groundnuts, Guntur red chilli, garlic, cumin, tamarind, curry leaves and rock salt. The groundnuts are roasted until golden and the skins are loose. The garlic and tamarind add sharpness to balance the richness of the peanut. The result is a thick, slightly coarse powder that has body.

Mix into hot rice with ghee or oil. Use as a dry dip for idli. Spread onto dosa before rolling. It also works mixed into a vegetable stir-fry at the end for a dry coating — a classic use in Andhra cooking where a little pallilu podi gets mixed into stir-fried cabbage or raw banana.
