About Andhra Red Chilli Garlic Podi

Red chilli garlic podi is in the same heat territory as nala karam, but the garlic changes the character completely. Where nala karam is purely about the chilli, vellulli karam is about the combination of chilli and raw garlic — and that combination produces something pungent, warming and deeply satisfying in a way that single-note spice powders don't.

This is made with whole Guntur red chillies roasted and ground with raw garlic, roasted chana dal, cumin, rock salt and tamarind. The raw garlic is not pre-roasted, which means its sharp pungency comes through in the finished powder. The tamarind adds a slight sourness that cuts the intensity.

On hot rice with ghee, this powder transforms the meal completely. The garlic aroma opens up when it hits the warm rice, and the heat comes in behind it. It's also excellent on dosa and pesarattu — spread a little inside before folding. If you make any quick stir-fry or tadka vegetables, a small pinch of this at the end makes a big difference.
